Beef Stroganoff


 

Comfort food during the winter season is essential. One of our favorite dishes to get us through these cold months is beef stroganoff. This is a family staple in many households, so we decided to put our own spin on it using our American Wagyu steak tips.

 

 

Step 1: Brown Steak tips

Cook over medium high heat to get a good sear on them and then remove once browned. Do this in two batches if necessary-crowding the pan will result in steamed meat rather than seared.

Step 2: Sautee mushrooms & herbs

In the same pan, add the Baby Bella mushrooms and cook down for three minutes. Then add in garlic and shallots. Sweat until fragrant and add the the two sprigs on thyme. Cook for three more minutes.

 
 
 

Step 3: Deglaze

After the mushrooms have been cooked down, add in the beef stock and bring to a boil. Then turn heat down and bring to a simmer.

Step 4: Add Heavy cream

The final step of the stroganoff sauce is to add in heavy cream and season with salt and pepper. Par cook the noodles to 80% then finish in the sauce for 2 minutes.

 
 
 

Step 5: Garnish & Serve

Once the noodles are cooked, add in the steak tips, sour cream, and chopped herbs. Season with salt and pepper and serve with fresh parsley.

Ingredients

  • 1 lb Black Hawk Farms Steak Tips
  • 8 Mushrooms (baby bella) sliced
  • 2 sprig thyme
  • 4 garlic cloves minced
  • 2 shallots minced
  • 2 cups beef stock
  • .5 cup chicken stock
  • .5 cup heavy cream
  • .5 cup sour cream
  • 5 cups dry egg noodles 
  • 2 tbsp chopped parsley
  • 2 tbsp chives

Instructions

  1. In a large saucepan, sear of steak tips in neutral oil on med/high heat and remove once browned. 
  2. In the same pan, add mushrooms and cook down for 3 minutes. 
  3. Add in garlic and shallots and sweat until fragrant, then add the thyme. Cook for 3 minutes.
  4. Deglaze with the stock and bring to a boil, then reduce to a simmer. 
  5. Add the heavy cream and season with salt and pepper.
  6. Add the cooked egg noodles. Par cook the noodles to 80% then finish in the sauce for 2 minutes.
  7. Once the noodles are cooked, add in the steak tips, sour cream and chopped herbs. 
  8. Season with salt and pepper.
