Inside Skirt Tacos with Arbol Salsa


 

Every day deserves to be Taco Tuesday when it’s this delicious! Our inside skirt steak is the perfect cut to use when you want maximum flavor with minimum effort.

The inside skirt comes from the interior abdominal muscle of the animal. It’s great for marinating, cooks in minutes, and is especially beefy, tender, and juicy. We cut ours into 12 oz portions making it easier to cook in a variety of ways.

While the skirt steak is delicious, the is highlight of this recipe is our salsa de arbol. Keep reading to view the recipe.

Inside Skirt Tacos with Arbol Salsa

Ingredients

Salsa de Arbol
  • 20 arbol chilis stems and seed removed
  • 3 roma tomatoes
  • 4 cloves garlic
  • 1 yellow onion
  • 4 oz neutral oil
  • salt
Taco Toppings
  • Inside skirt steak, seasoned with salt
  • 1/2 white onion minced
  • 1 bunch cilantro chopped fine
  • 1 lime

Instructions

  1. Add chilis to a dry pan and roast until fragrant (1 minute)
  2. On a sheet tray place the rest of the veggies in the oven on broil and cook until charred.
  3. Remove from the oven and allow to cool. add all items to a blender and puree while slowly adding the oil to reach the desired consistency, season with salt.
  4. Sear the skirt steak in a pan on high heat, constantly flip the steak to the hot part of the pan to slowly build the crust and cook evenly.
  5. Set aside and allow to rest for 3 minutes then slice against the grain
  6. Lightly toast the corn tortillas in the same pan and then assemble the tacos.
