Guava Glazed Chuck Roast with Apple Slaw

Ingredients

  • Black Hawk Farms Chuck Roast 
  • 8oz Guava Paste
  • 8oz Beef Stock
Green Apple and Fennel Slaw
  • 1 green apple
  • 1 fennel bulb
  • 1 jalapeño
  • ¼ green cabbage
  • 1 tbsp mayo
  • 1 tsp poppy seed
  • 1 lemon
  • 1 tbsp sugar
  • ½ tsp white pepper
  • salt to taste

Instructions

Guava Glazed Chuck Roast
  1. Light your Pit Barrel® according to the instructions and install the grill grate
  2. In a saucepan, bring 8oz of guava paste and 8oz of beef stock to a boil
  3. Rub chuck roast with warm guava jam and season with salt
  4. Secure the lid and cook until internal temperature reaches 165° (approx. 2 hours)
  5. Wrap in foil with more guava jam mix and cook with lid closed until internal temperature reaches 215° (approx 3 hours)
  6. Remove from Pit Barrel® and let rest wrapped for 15-30 minutes
  7. Shred and serve with green apple and fennel slaw
Green Apple and Fennel Slaw
  1. Deseed jalapeño and finely mince
  2. Slice fennel, green apple and cabbage into thin shreds
  3. In a separate bowl, add together all remaining ingredients plus the jalapeño to make the dressing
  4. Mix everything together and store in fridge for at least 20-30 minutes before serving.
