Guava Glazed Chuck Roast with Apple Slaw

Guava Glazed Chuck Roast with Apple Slaw
Ingredients
- Black Hawk Farms Chuck Roast
- 8oz Guava Paste
- 8oz Beef Stock
Green Apple and Fennel Slaw
- 1 green apple
- 1 fennel bulb
- 1 jalapeño
- ¼ green cabbage
- 1 tbsp mayo
- 1 tsp poppy seed
- 1 lemon
- 1 tbsp sugar
- ½ tsp white pepper
- salt to taste
Instructions
Guava Glazed Chuck Roast
- Light your Pit Barrel® according to the instructions and install the grill grate
- In a saucepan, bring 8oz of guava paste and 8oz of beef stock to a boil
- Rub chuck roast with warm guava jam and season with salt
- Secure the lid and cook until internal temperature reaches 165° (approx. 2 hours)
- Wrap in foil with more guava jam mix and cook with lid closed until internal temperature reaches 215° (approx 3 hours)
- Remove from Pit Barrel® and let rest wrapped for 15-30 minutes
- Shred and serve with green apple and fennel slaw
Green Apple and Fennel Slaw
- Deseed jalapeño and finely mince
- Slice fennel, green apple and cabbage into thin shreds
- In a separate bowl, add together all remaining ingredients plus the jalapeño to make the dressing
- Mix everything together and store in fridge for at least 20-30 minutes before serving.
